so what do keen gardeners DO over the winter .. is there anything that can be done? Is there anything that will actually grow in winter? I'd like to give it a try but everything seems to be going into dormancy mode now and i am guessing that it won't return from that till late March at the earliest.

Sweep leaves. Sweep more leaves. Cut back brown stuff on dead plants. Possibly a bonfire of the aforementioned if there is a dry day between now and spring*. Otherwise pile it all up and wait for it to compost.
*by no means guaranteed in Wales.

Hibernation sounds rather wonderful.
Kale is a form of cabbage is it not WG? Can it be grown in winter? How? Where? Where do I get it?

I have a spare packet, I'll send you some. It may not sprout till the spring though.
I planted mine in the summer and it's still going, despite the caterpillars.

I use leaves. Suck them up into a grinder and then dump them out to protect bulbs and add nutrients to the soil.
