As we say in Wales My son made the filling for spanakopita, but discovered the filo pastry was off (been in the fridge too long). So instead I fried up thinly sliced aubergine (eggplant), and part boiled thinly sliced potatoes, then layered the lot over the spanakopita filling with loads of cheese sauce and cheese on top, sprinkled with smoked paprika. So basically a spanakopita moussaka. It was proper lush.

The only decent use of 'aubergine' is to roast it and extract the cooked innards to puree with tahini and lemon juice in to baba ganooj!
