I had tripe and onions several times in the early 1950s when meat was expensive and rationed. The key to cooking tripe is to make sure you boil it for a long time in milk. Boiling it solely in water makes it taste disgusting (or even more disgusting).

I've always thought tripe was disgusting, and the smell awful. But I saw them do a recipe in some Italian restaurant and it looked pretty amazing. Everyone loved it. But like tangent says, they boiled it in milk or something, to get rid of the gross flavour. I would be willing to try that tripe, if it smelt good too.

I saw some in a grocery store once. It was bright white, and with that texture, looked more like something you'd scrub the bathroom with than eat.
