Which I am sharing with you all (again) cos I am generous like that.
So, take some cooked rice. I personally favour basmati. Note, do not use too much water when cooking the rice or you end up with a soggy mess, which is what I nearly always do.
Take a yellow pepper. Chop.
A tomato. Ditto.
A can of tuna in sunflower oil.
A chorizo, chopped.
Three frankfurters, chopped.
A can of sweetcorn.
Mix together. Chill. Eat.

My rice salad is feeling very under appreciated.

Do you put the tuna oil in the salad or drain it away?
It sounds like it might be nice hot. I'm thinking same ingredients but use microwave rice so there's no need to drain the water and then just warm up everything together in the microwave.

I'm not a fan of rice salad either. But then I'm also not a huge fan of pasta salad or potato salad.

I associate rice salad with church garden parties. Many years ago, the ladies would enthuse ecstatically over each others offerings whilst the men would stand around politely whilst secretly hoping there was a sausage lurking underneath the lettuce leaves.

Potato salad is nothing something I much care about. I don't hate it but I put it in the same category as coleslaw... it's not awful but if I am gonna have all that calories and fat I'll have a cheeseburger
