I dont know if this qualifies as a "carol" but it is my favourite Christmas song, Koppången, here sung in English by Anne Sofie von Otter:
Out of the old Christmas songs I love O Holy Night. But it is is song I prefer to listen to, not to sing myself.

Nice arrangement! I once sang one of the solo verses of this song when I was about 9 months pregnant (it must have been with my daughter who was born in February). It added a bit of poignancy to the song...
