Col brought a load of dried herbs with him when he came though I've not really experimented with them very much. I do like rosemary with lamb and parsley goes with pretty much anything but I don't know much about any others. Do you have any favourites? What herbs go well with what dishes? Is fresh better than dried? Do any of you grow your own? (I've grown chives before which is very easy but that's about it).

I love herbs of all kinds. Fresh is usually nicer, but it really depends on the herb. For example basil really should be fresh. But sage or thyme works well both fresh and dried. Basil and tomato is one of the best combos. And coriander with curries is super yummy. Basil is also good in Thai curries.

What is that leafy thing you often find in good curries? (I gather you're meant to take it out before eating).

I'm guessing that is coriander. And you can eat that. Looks like flat leaf parsley?

Basil and tomato, yes
Thyme is good - not bad dried, better fresh except fiddly (tiny leaves)
Rosemary is good in lots of things, not just lamb
Chives are yummy
I never got the hang of sage although it's quite distinctive

I love oregano. I eat basil a lot too. Mint is nice in teas and salads.

I don't know several boxes of dried stuff. Nothing that looks particularly exotic.

My favorite is basil. It can be used either fresh or dried. With oregano, marjoram, and thyme, along with garlic, you have the basic flavorings of Italian food, as it is known in the US. My favorite use of basil is to make fresh pesto with olive oil, pinenuts, and parmesan. I have already planted nine basil plants in pots and will probably get a few more in during the coming weeks.
Garlic. A must.
