Don't let that bother you too much, though, because so are peppers, tomatoes, aubergine, and a host of other, more exotic, foodstuffs.

Yes. Deep fried. Deep frying potatoes turns crunchy dirt-tasting vegetable matter into exquisite mouth-pleasing tidbits of ambrosia.
The same thing can be accomplished by boiling the crap out of them, draining the water and vigorously mashing them with copious butter and a splash of cream.

How are they different from baked potatoes? They are sliced thick, layered in a shallow dish, covered with a creamy sauce and cheese, then baked. So, in that sense, they are baked. Also known in French cooking as au gratin. Recipe here.

I made a potato pie over the weekend which I suppose was something like a gratin. It didn't have cheese, but did have a creamy sauce between sliced potatoes and lots of onion. Tasty.

Mumberry used to make a dish she called "French potatoes" which was like scalloped, but it also had boiled eggs in it and I never like it for some reason. Only the top which had cheese on it.

Yeah, that sounds yucky to me. When I have fried eggs and there are fried potatoes on the plate I always make sure they don't touch.
